Healthy Breakfast Cookies

You may be thinking to yourself ‘Cookies for breakfast?   • Low in sugar: The date molasses is a natural sweetener so you can prevent that mid morning sugar crash that you get from granola or other store bought breakfast bars.
  • Packed with nutrients: These cookies are fully loaded when it comes to protein, fibre and healthy fats.
  • Help keep you full: The oats are not only satisfying texture-wise, but the combination of high fibre and slow-digesting carbohydrates in the oats results in a slow release of sugar into the blood & helps provide a sustained supply of energy to the body.
  • Easy to customize: Yes, yes, yes! You can totally go wild with the substitutions here. Prefer white chocolate over dark? Flax seed over chia? Slivered pistachio over sliced almond? Go for it!

How to make healthy oatmeal breakfast cookies:


  1. Mix all the dry ingredients together
  2. Mix all the wet ingredients together
  3. Pour the dry ingredients into the wet and mix until well combined.
  4. Bake for 12-14 mins!

I mean, it really couldn’t not be any easier than that.

While these cookies are called breakfast cookies, they’re  great to snack on throughout the day. You can make them and freeze them in an airtight container for up to three months and thaw when needed for the ultimate grab and go meal.
