How to Make Bacon Date Bread
First, you will need to cook the bacon. In a large skillet, cook bacon over medium heat until crisp, flipping occasionally.
Once bacon is cooked, remove from skillet and add the diced onion. Cook over medium-high heat until tender, for about 1-2 minutes. Let cool.

Meanwhile, in a bowl, whisk together the flour, baking powder, sugar, salt and cayenne.Â

In a separate bowl, whisk together the eggs, yogurt and melted ghee until blended. Add the flour mixture and stir until moistened.Â

Fold in 1 cup of parmesan, dates, bacon and onions. Don’t worry if the batter seems thick, it is supposed to be that way.Â

Transfer to a greased loaf pan and sprinkle with remaining cheese. Bake for about 45-50 minutes and let cool in the pan for 10 minutes before removing. Serve warm and enjoy!

How to Freeze Bacon Date Bread
If you can’t finish the bread in a couple of days, it’s best to freeze it so it doesn’t get stale. You can totally freeze bread and maintain it’s fluffy texture and warm flavour. Here is the best way to freeze bread:
- Cool baked bread completely.
- Tightly wrap the loaf or slices in 2-3 layers of plastic wrap or aluminum foil.
- Place wrapped bread in a large freezer-friendly storage bag or reusable container.
- Date the bag and freeze for up to 3-4 months. Thaw wrapped or unwrapped in the refrigerator or at room temperature. All methods work like a charm!
Tip: Freeze the bread in slices as you can thaw one at a time and it will thaw much quicker.

Ingredients
8 bacon strips, chopped
1 small red onion, diced
2 cups all-purpose flour
3 tsp baking powder
1 tsp sugar
1/4 tsp salt
1/8 tsp cayenne pepper
2 large eggs, room temperature
1 cup thick yogurt
1/4 cup ghee, melted
1-1/2 cups shredded Parmesan cheese, divided

2/3 cup pitted dates, chopped
Directions
Preheat the oven to 350°F. In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a spoon.
Add onion to the skillet; cook and stir over medium-high heat until tender, 1-2 minutes. Cool slightly.
In a bowl, whisk flour, baking powder, sugar, salt and cayenne. In another bowl, whisk eggs, yogurt and melted ghee until blended.
Add the flour mixture; stir just until moistened. Fold in 1 cup cheese, dates, bacon and onions (batter will be thick).
Transfer to a greased 8x4-in. loaf pan; sprinkle with remaining cheese.
Bake until a toothpick inserted in center comes out clean, 45-50 minutes.
Cool in pan 10 minutes before removing to a wire rack. Serve warm.
