To embark on your pistachio nut butter journey, gather fresh and high-quality pistachios. It might be easier and more economic to buy your pistachios in bulk. 

What Equipment Do I Need To Make Pistachio Nut Butter?

We’ve found that in general food processors are best for grinding up nuts. Though if you’re looking for a super creamy nut butter, a regular high-power blender such as a Nutribullet will also do the job perfectly.

What Type Of Pistachios Do I Use To Make Pistachio Nut Butter?

What type of pistachios you should use depends on a few factors, but if possible, we want to start with raw pistachios. In saying this, you can definitely make pistachio nut butter from pre-roasted pistachios, it just won't taste as fresh. If you don’t want to deal with the time consuming & potentially thumb-numbing experience of shelling your pistachios, we advise you to buy them pre-shelled; however since the shell helps maintain freshness, we recommend that you choose a supplier with a freshness guarantee. Alternatively if you want to skip both the shelling and the blanching steps, you can buy your pistachios shelled, blanched and slivered. If you’ve got the time to shell your pistachios yourself, great! Grab a chair, stick on your fave playlist and enjoy the meditative process of cracking open these little gems one by one!

Step 1:  Blanching the Pistachios

Before we talk about blending, let's talk about blanching. Blanching involves briefly immersing the pistachios in boiling water, then transferring them to an ice bath to remove the skin. As mentioned above, you can purchase slivered pistachios which are already blanched and super easy to blend.

As we know from hazelnuts and almonds, the skin of most nuts can often be quite bitter. We recommend that to save your blender from overheating, you should blend the nuts in intervals and wait until they have fully cooled after roasting. Scrape the sides down as needed and don’t forget that if you want a pistachio paste rather than a butter, stop blending when it has achieved a paste consistency.

My Nut Butter Is Too Thick, What Should I Do?

If you’ve blended your pistachios for the appropriate timing but haven’t received the consistency you desire for spreading you can always add a neutral oil such as avocado oil or peanut oil to smoothen it out a bit.
